Twice Baked Potato Pie
Prep Time: 15 minutes. Start to Finish: 1 hour and 15 minutes. Serves 4
Ingredients:
1 lb lean ground beef
¼ cup chopped onion
¼ cup plain bread crumbs
½ teaspoon dried sage leaves (or 2 teaspoons fresh)
½ teaspoon salt
1 egg
1 package (1lb 8oz) refrigerated garlic mashed potatoes (or 1 1/2 pounds of homemade mashed potatoes prepared with minced garlic)
1 cup shredded cheddar cheese
¼ cup chopped fresh tomato
2 slices cooked bacon
2 medium green onions chopped (2 tablespoons)
Directions:
Heat oven to 350 degrees.
In a large bowl mix the beef, onion, bread crumbs, sage, salt and egg until well blended.
Press in bottom and sides of ungreased 8-inch (square or round) glass baking dish.
Spread mashed potatoes evenly over the top and sprinkle with cheese.
Bake uncovered about 50 minutes or until meat thermometer inserted into the center of the meat mixture reads 160 degrees.
Sprinkle with the tomato, bacon and green onions.
Wait at least 5 minutes before cutting, to allow potatoes to settle.
