Cassie's Enchilada Lasagna
Prep Time: 20 minutes. Start to Finish: 45 minutes. Serves 4
Ingredients:
1 28oz can of enchilada sauce
Large can of sliced black olives
1 lb ground beef; browned
2 lbs cheese
8 flour tortillas, ripped into strips
Directions:
Preheat oven to 350
In a 13x9 glass baking pan put 4 tablespoons of enchilada sauce on the bottom and spread it around.
Put 4 of the tortillas (ripped into stripes) to cover the sauce.
Layer ½ beef, ½ cheese, ½ olives and ½ of the remaining sauce, than repeat once.
Place in over uncover for about 20 minutes, or until cheese is melted.
Let stand 5 minutes and serve hot.
