Pasta and Meatball Stew


Pasta and Meatball Stew
Prep Time: 40 minutes. Start to Finish: 40 minutes. Serves 4
Ingredients:
4 tablespoons milk
2 egg whites
1 lb ground beef/turkey
½ cup Progresso plain bread crumbs
½ teaspoon poultry seasoning
¼ teaspoon pepper
2 cups water
2 cups fat free tomato pasta sauce
1 green bell pepper, chopped
1 jar 4.5 oz sliced mushrooms
1 2/3 cups uncooked radiator (nuggets) pasta
Parmesan cheese; if desired for sprinkling


Directions:
Heat oven to 450 degrees
In a medium bowl, mix milk and egg whites; stir in beef/turkey, bread crumbs, poultry seasoning and pepper
Shape into 1-inch balls and place in an ungreased 15x10c1 pan and bake about 10 minutes or until lightly browned and thoroughly cooked
Meanwhile, in a 4-quart saucepan, heat water, pasta sauce, bell pepper and mushrooms to boiling
Stir in pasta and reduce heat; simmer about 15 minutes, stirring occasionally until pasta is of desired doneness
Stir in meatball; heat until hot; serve and sprinkle individual servings with the Parmesan cheese
