Southwestern Steak Salad with Chipotle Ranch Dressing
Prep Time: 20 minutes. Start to Finish: 20 minutes. Serves 4
Ingredients:
For steak:
2 tablespoons extra-virgin olive oil
1 pound flank steak, cut across the grain into thin strips
2 tablespoons taco seasoning mix
For chipotle ranch dressing:
¼ cup ranch salad dressing
¼ cup bottled chipotle salsa
For southwestern steak salad:
Tortilla chips
9 ounces prewashed salad mix
1 11oz can mexicorn, drained
1 cup shredded Mexican cheese blend
1 avocado, sliced
2 medium tomatoes, diced
3 slices of cooked bacon
Directions:
In a large skillet, heat olive oil over medium-high heat. Sprinkle steak strips with taco seasoning mix, add steak strips to hot oil; cook, and stir for 5 to 7 minutes or until cooked through.
For Chipotle Ranch Dressing, in a small bowl, combine salad dressing and salsa. Set aside.
For Southwestern Steak Salad, spread a handful of chips on each of 4 salad plates. Add some of the salad mix to each plate, top with some of the drained mexicorn and cheese, divide steak strips among plates.
Top each plate with some of the avocado and diced tomatoes, garnish plates with bacon pieces and serve with Chipotle Ranch Dressing.
