Chicken with Bacon Gravy
Prep Time: 15 minutes. Start to Finish: 45 minutes. Serves 4
Ingredients:
6 slices bacon
1 lb skinless, boneless chicken breast
1 lb large carrots, thinly sliced
1 large onion
1 cup chicken broth, divided
2 oz cream cheese, cubed
3 cups hot cooked brown rice
Directions:
Cook and stir bacon in a large nonstick skillet on medium heat for 5 minutes or until crisp; remove bacon from skillet and drain on paper towels and discard drippings from skillet
Add chicken to the same skillet and cook 5 to 6 minutes or until done (165 degrees); transfer chicken to plate and cover to keep warm
Add vegetables and ½ cup broth to skillet; cover and simmer 10 minutes or until vegetables are tender
Stir in remaining broth and cream cheese; cook uncovered 2 minutes or until cream cheese is melted and sauce is thickened, stirring frequently
Return chicken to skillet and cook 2 minutes or until heated through
Spoon rice onto plate and top with chicken, sauce and bacon and serve warm
