Chicken Marsala


Chicken Marsala
Prep Time: 10 minutes. Start to Finish: 5 hours and 25 minutes. Serves 8
Ingredients:
2 cloves garlic, finely chopped
1 tablespoon vegetable oil
8 boneless skinless chicken breasts
½ teaspoon salt
½ teaspoon pepper
2 jars (6oz each) sliced mushrooms
1 cup sweet Marsala wine, or chicken broth
½ cup water
¼ cup cornstarch
3 tablespoons fresh chopped parsley
Pasta or rice (of your choice) to serve over

Directions:
Spray a 4 to 5 quart slow cooker with cooking spray. In slow cooker, place the garlic and oil. Sprinkle the chicken with the salt and pepper, than place in the slow cooker over garlic. Place mushrooms over chicken; pour wine over everything in slow cooker.
Cover and cook on low heat setting for 5 to 6 hours
Remove chicken to plate; cover to keep warm. In a small bowl, mix water and corn starch until smooth; stir into liquid in slow cooker. Increase heat to high and cook for about 10 more minutes or until sauce is slightly thickened
Return chicken to slow cooker; cover and cook for about 5 minutes longer or until chicken is hot
Serve over pasta or rice; placing the chicken on top and than spooning the mixture over the chicken, sprinkle with the fresh parsley
