Bow-Ties with Bacon and Tomatoes
Prep Time: 30 minutes. Start to Finish: 30 minutes. Serves 4
Ingredients:
6 slices bacon crumbled
1 medium onion, finely chopped (1/2 cup)
1 14.5 ounce diced tomatoes with roasted garlic and onion, undrained
1 ¾ cup chicken broth
3-cups uncooked bow-tie (farfalle) pasta (6oz)
1/8 teaspoons pepper
Directions:
In 12-inch skillet, cook bacon over medium-high heat 8-10 minutes, stirring frequently until browned.
Reduce heat to medium, add onion; cook 2 to 3 minutes, stirring frequently, until tender.
Stir in tomatoes, broth, uncooked pasta and pepper.
Heat to boiling over high heat, reduce heat to medium; cook uncovered 10 to 12 minutes, stirring occasionally, until pasta is tender and mixture is as thick as you like.
