Italian Sausage Rigatoni
Prep Time: 10 minutes. Start to Finish: 30 minutes. Serves 4
Ingredients:
1 pkg (20oz) Italian mild sausage (about 1 ½ lbs); grilled and coin sliced
1 pkg rigatoni pasta
3 tablespoons olive oil
2 cloves garlic minced
1 large red pepper, chunked and sautéed
1 jar (26 oz) of pasta sauce
2 tablespoons parsley; chopped
Directions:
Heat a nonstick skillet to a medium temperature, add ½ cup water and place links in pan
Cover and heat for 10 minutes, turn links. Remove cover and continue cooking for 10 minutes, slice sausage coin style and set aside
Cook the rigatoni according to package directions and keep warm
In a large saucepan, place olive oil and garlic and sauté lightly for 30 seconds
Add peppers and cook until tender crisp
Combine cooked sausage and pasta sauce with peppers until warm
Mix with pasta and serve, or serve over pasta
Top with fresh parsely
