Chicken Pasta Soup
Prep Time: 40 minutes. Start to Finish: 40 minutes. Serves 6
Ingredients:
2 teaspoons butter or margarine
3 boneless skinless chicken breasts; cut into thin strips
8 oz sliced fresh mushroom; about 3 cups
5 ¼ cups chicken broth
1 ½ cup uncooked medium pasta shells (4oz)
1 cup sliced yellow summer sausage or zucchini
1 red bell pepper; chopped
1 teaspoon Italian seasoning
Season with crushed red pepper, garlic powder and thyme to taste
Directions:
In a 4-quart nonstick saucepan or dutch oven, heat butter over medium heat
Cook chicken and mushrooms in butter, stirring occasionally until chicken is no longer pink
Stir in remaining ingredients (except for seasoning for taste) and heat to boiling
Reduce heat to low; simmer 10 to 13 minutes or until pasta is tender than season to taste
Serve hot immediately
