Mummified Meatballs



Mummified Meatballs
Prep Time: 15 minutes. Start to Finish: 35 minutes. Serves 8
Ingredients:
2 8 ounce cans seamless dough sheets
16 frozen cooked Italian-style meatballs 1 to 1 ½ inch, thawed and half
1 cup tomato-basil pasta sauce
1 cup shredded mozzarella cheese
1 egg slightly beaten
¼ cup grated Parmesan cheese
Pasta sauce for dipping, if wanted

Directions:
Heat oven to 375 and spray 2 cookie sheets with cooking spray
Unroll dough and cut into 8 rectangles and place 4 on each cookie sheet
Place 4 meatball halves lengthwise down center of each rectangle
Top each with 2 tablespoons pasta sauce and 2 tablespoons mozzarella cheese
With scissors or sharp knife, make cuts 1 inch apart on each side of filling
Alternately cross strips over filling
Brush dough with beaten egg; sprinkle with parmesan cheese
Bake 15 to 20 minutes or until golden brown
Serve with pasta sauce

Ghoulish Chicken Tetrazzini


Ghoulish Chicken Tetrazzini
Prep Time: 20 minutes. Start to Finish: 55 minutes. Serves 12
Ingredients:
1 16 ounce package vermicelli pasta
½ cup chicken broth
4 cups chopped cooked chicken (rotisserie chicken)
1 10 ¾ ounce can of cream of mushroom soup
1 10 ¾ ounce can of cream of chicken soup
1 10 ¾ ounce can of cream of celery soup
1 8 ounce container sour cream
1 6 ounce jar sliced mushrooms, drained
½ cup shredded parmesan cheese
1 teaspoon pepper
½ teaspoon salt
2 cups shredded cheddar cheese

Directions:
Heat oven to 350
Lightly spray 2 (2-quart) casserole dishes with cooking spray. Cook and drain vermicelli as directed on package; return to saucepan. Add broth; toss to coat
In a large bowl, stir remaining ingredients expect cheddar cheese. Add vermicelli and toss well. Divide mixture evenly between casserole dishes and sprinkle with cheddar cheese
Cover with tin foil and bake for 30 minutes. Uncover and bake for 5 minutes longer or until cheese is bubbly

Pumpkin Pizzas



Pumpkin Pizzas
Prep Time: 15 minutes. Start to Finish: 25 minutes. Serves 6
Ingredients:
1 13.8 ounce can of refrigerated pizza crust
1 cup pizza sauce
½ cup shredded cheddar cheese
9 slices pepperoni (or more if wanted)
12 small fresh basil leaves

Directions:
Heat oven to 400
Unroll dough on work surface; roll into 13x10-inch rectangle
With 4 or 5 inch pumpkin-shaped cookie cutter, cut dough into 6 pumpkin shapes, rerolling dough if necessary
Place 1 inch a part on ungreased cookie sheet
Spread pizza sauce over shapes to within ¼ inch of edges
Sprinkle with cheese (place more pepperonis under cheese if wanted)
Cut 6 slices of the pepperoni into triangles; place on pumpkins to create eyes
Cut remaining pepperoni slices in half to look like jack-o-lantern mouths; place on pumpkins
Place 2 basil leaves on each for stem
Bake for 10 minutes or until cheese is melted

Chocolate Spiderweb Treats



Chocolate Spiderweb Treats
Prep Time: 20 minutes. Start to Finish: 50 minutes. Serves 10
Ingredients:
4 cups packed miniature marshmallows
1/3 cup creamy peanut butter
2 tablespoons butter or margarine
6 cups cocoa-flavored rice cereal
1 bag (11.5 oz) milk chocolate chips (2 cups)
½ cup white chocolate chips

Directions:
Lightly spray 13x10x1 inch pan with cooking spray
In large microwaveable bowl, microwave marshmallows, peanut butter and butter uncovered on high for 2 minutes; stir vigorously with wooden spoon until smooth
Add cereal and stir until well coated than quickly spoon mixture into pan and press evenly; than cool until firm. Cut into rounds or square with 3 inch cookie cutter or knife
In medium microwaveable bowl, microwave chocolate chips uncovered on medium (50% power) 2 minutes, stirring once, until softened and chips can be stirred smooth; set aside
In small resealable freezer plastic bag, place white chips in and seal bag. Microwave on medium (50% power) 1 minute or until softened, gently squeeze bag until chips are smooth, cut off tiny corner of bag
Spread top of 1 cookie with melted milk chocolate chips, immediately drizzle melted white chips in 3 rings on top of milk chocolate
Starting at center, pull toothpick through rings to look like a web, repeat with remaining treats and refrigerate 30 minutes or until chocolate is firm

Zombie Ziti


Zombie Ziti
Prep Time: 20 minutes. Start to Finish: 30 minutes. Serves 6
Ingredients:
2 ½ cups uncooked ziti noodles (8 oz)
1 pound bulk Italian pork sausage
1 container (8 ounce) chopped mixed bell pepper
½ cup drained sliced banana peppers
1 14.5 ounce can diced tomatoes, drained
1 cup whipping cream
4 ounce prepared cheese product, cut into cubes

Directions:
Cook and drain pasta as directed on package; cover to keep warm
Meanwhile, in 12-inch nonstick skillet, cook sausage over medium-high heat for 6 minutes, stirring occasionally, until no longer pink, drain and set aside
Add peppers to skillet; cook over medium-high heat 3 minutes, stirring occasionally, until tender
Add tomatoes, whipping cream and cheese, reducing heat to medium
Simmer 5 minutes, stirring occasionally, until cheese is melted
Stir in cooked pasta and sausage; cook 1 minute and serve hot

Cinnamon-Sugar Ghost Toast



Cinnamon-Sugar Ghost Toast
Prep Time: 10 minutes. Start to Finish: 10 minutes. Serves 6
Ingredients:
6 slices white or white whole grain bread, lightly toasted
4 ½ teaspoons butter or margarine, softened
6 teaspoons cinnamon-sugar
18 miniature semi-sweet chocolate chips
4 inch ghost-shaped cookie cutter

Directions:
Set oven or toaster oven control to broil
With 4-inch ghost-shaped cookie cutter, cut bread into ghost shapes
Spread softened butter on cutouts
Sprinkle with cinnamon-sugar
Place on ungreased cookie sheet
Broil with tops about 5 inches from heat 2 to 3 minutes or until topping is caramelized
Add miniature chocolate chips to each ghost for eyes and mouth

Halloween Sloppy Joes



Halloween Sloppy Joes
Prep Time: 20 minutes. Start to Finish: 20 minutes. Serves 6
Ingredients:
1 pound ground beef
1 medium onion, chopped ( ½ cup)
½ cup refrigerated chopped mixed bell peppers
1 14.5 ounce can fire-roasted diced tomatoes with garlic, undrained
½ cup ketchup
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
¼ teaspoon salt
1/8 teaspoon pepper
6 hamburger buns, split
12 pimiento-stuffed green olives

Directions:
In 10-inch non-stick skillet, cook beef over medium-high heat 5-7 minutes, stirring occasionally, until thoroughly cooked; drain and set aside
Add onion and bell pepper to skillet; cook for 5 minutes or until tender
Stir in cooked beef, tomatoes, ketchup, chili powder, Worcestershire sauce, salt and pepper
Cook 2 minutes or until thoroughly heated
Spoon beef mixture onto buns
On top of each bun, place 2 olives to look like eyes; poke toothpick in center of each to hold in place
