Layers of Love Chocolate Brownies


Layers of Love Chocolate Brownies
Prep Time: 15 minutes. Start to Finish: 1 hour and 15 minutes. Serves 10
Ingredients:
¾ cups all purpose flour                                  3 large eggs, divided
¾ cup baking cocoa                                         2 teaspoons vanilla extract
¼ teaspoon salt                                                 1 cup chopped pecans and/or coconut shavings)
½ cup butter, cut into pieces                            ¾ cup white chocolate chips
½ granulated sugar                                          ½ cup caramel ice cream topping
½ cup packed brown sugar                             ¾ cup semi-sweet chocolate chips

Directions:
Preheat oven to 350 and grease an 8 inch square baking pan
Combine flour, cocoa and salt in a small bowl
Beat in butter, granulated sugar and brown sugar in large mixer bowl until creamy
Add 2 eggs, one at a time, beating well after each addition; Add vanilla extract, mix well; Gradually beat in flour mixture
Reserve ¾ cup batter
Spread remaining batter into prepared pan; sprinkle nuts and/or coconut and white chocolate chips over batter; Drizzle caramel over top
Beat remaining egg and reserved batter in same bowl until light in color; stir in semi-sweet chips; spread evenly over caramel topping
Bake for 30 to 35 minutes or until center is set; Cool completely in pan on wire rack. Cut into squares to serve

Easy Taco Melt

Easy Taco Melt
Prep Time: 15 minutes. Start to Finish: 30 minutes. Serves 4
Ingredients:
1 pound ground beef, cooked and drained
1 ½ cup salsa
1 16.3-ounce can Grands refrigerated biscuits
½ cup shredded Monterey jack cheese

Directions:
In 10-inch nonstick skillet, mix cooked beef and 1/2 cup of the salsa
Cook over medium-high heat, stirring occasionally, until hot
Press each biscuit into 6-inch round
Spoon 1/3 cup meat mixture and 1 tablespoon cheese onto center of each round
Fold dough in half over filling; press to seal
Place on greased cookie sheet
Bake at 375°F 9 to 14 minutes or until golden brown
Serve with remaining salsa

One-Pot Taco Pasta

One-Pot Taco Pasta
Prep Time: 35 minutes. Start to Finish: 50 minutes. Serves 10
Ingredients:
1 pound ground beef
1 yellow onion chopped
1 each red and yellow peppers, chopped
1 clove garlic, minced
1 tablespoon chili powder
3 cups water
1 15-ounce tomato sauce
3 cups pasta, uncooked
½ cup frozen corn
1 cup shredded Mexican cheese
1 green onion diagonally cut into thin slices

Directions:
Brown meat with yellow onions in nonstick Dutch oven or deep large nonstick skillet
Add peppers; cook 5 min. or until crisp-tender, stirring occasionally
Stir in garlic and chili powder; cook 1 min
Add water and sauce; stir; bring to boil; Stir in pasta; cover; Simmer 15 min or just until pasta is tender, stirring occasionally
Stir in corn; cook 3 to 4 min. or until heated through
Top with cheese and green onions

Rustic Chicken Pot Pie


Rustic Chicken Pot Pie
Prep Time: 10 minutes. Start to Finish: 35 minutes. Serves 4
Ingredients:
1 18.6-ounce chicken pot pie style soup
2 cups frozen mixed vegetables, thawed and drained
½ cup plain mashed potato mix (dry)
½ teaspoon salt
¼ teaspoon pepper
1 box refrigerated pie crusts, softened as directed on box
2 cups prepared mashed potatoes
1 egg beaten

Directions:
Heat oven to 450°F

In saucepan, heat soup, vegetables, dry potato mix, salt and pepper over medium heat until thickened

Remove pie crusts from pouches; unroll onto 2 ungreased cookie sheets

Spoon 1 cup mashed potatoes on center of each crust, spreading to within 2 inches of edge

Top with soup mixture, dividing evenly between crusts

Fold crust over edge to form 2-inch border, pleating crust as necessary

Brush crust with beaten egg

Bake 20 to 25 minutes or until crust is golden brown

Sunrise Sausage Bake

Sunrise Sausage Bake
Prep Time: 20 minutes. Start to Finish: 1 hour 10 minutes. Serves 8
Ingredients:
2 12 ounce cans evaporated milk
8 large eggs, beaten
1 pound precooked sausage links, cut into ¼-inch slices
2 cups cheddar cheese shredded (8-ounces)
1 cup red bell pepper, chopped
1 cup green bell pepper, chopped
2 green onions (green parts only), sliced
½ teaspoon onion powder
¼ teaspoon garlic powder
1 loaf (8 cups) ½ inch cubed Italian or French bread

Directions:
Heat oven to 350°F; Grease bottom only of 13x9-inch baking dish with shortening or cooking spray

Combine milk, eggs, sausage, cheese, bell peppers, green onions, onion powder and garlic powder in large bowl

Add bread cubes, stirring gently to moisten bread

Pour mixture into baking dish

Bake for 45 minutes or until set and serve warm

NOTE: this can be assembled ahead of time and refrigerated; just let stand for 30 minutes before baking at room temperature
